Easy Keto Chocolate Mousse Cake



Take this decadent dessert to a dinner party and nobody will know it’s keto or low carb. The Keto chocolate mousse cake is a rich and easy one-bowl cake.
Recipe:
Keto Chocolate Mousse Cake – 12 Serves
6 net grams/carbs per serve
Dry Ingredients
2 cups almond flour
3/4 cup powdered sweetener (I used xylitol)
2 tablespoons oat fiber
1 teaspoon salt
1/2 cup cocoa
3 teaspoons baking powder
Wet ingredients
1/2 cup of water with a shot of coffee
1/2 cup oil of choice
3 eggs
vanilla

Sugar-free red jam optional

Chocolate Mousse
2 cups heavy cream
1/2 cup cocoa
1/3 cup powdered sweetener

Method:
Mix the dry ingredients together in a large bowl. Add the wet ingredients. Whisk together until well combined.
Place into a lined 9″ 23cm tin.
Cook in moderate oven 180C or 350F until cooked when tested. The cake will spring back in the middle when cooked.
Cool completely and refrigerate for ease of handling.
Turn out onto a serving plate.
Spread with jam if using.
Beat all chocolate mousse ingredients together until very thick. Place half of the mousse in a piping bag with a large nozzle.
Top the cake with chocolate mousse and pipe a decorative edge. Sieve cocoa on the cake and decorate with strawberries.
Refrigerate until serving.
