Ingredients:
• 170g whole walnuts
• 100g ground almonds
• 60g collagen protein powder
• 70g walnut oil
• 120g erythritol or xylitol
• 1 egg, whole
• 1 egg yolk
• 1 teaspoon of baking powder
• 1/2 teaspoon salt
• 1 teaspoon vanilla extract
• 80g chopped dark chocolate, at least 70% cocoa
Preparation:
Roughly chop the chocolate and 50g of the walnuts and set aside. Finely grind the remaining walnuts in the food processor. Knead the ground nuts and all remaining ingredients (except the chopped chocolate and chopped walnuts) into a mass. I used my stand mixer on medium speed. Then add the chopped chocolate and the remaining walnuts and mix gently. Pour the mixture into a cake pan (20x20cm) lined with baking paper, spread evenly with a spatula and level. Finally bake in a preheated oven at 160ºC for about 20 minutes. Let cool completely before cutting into squares.
Ninja Grill Tip: If you want to bake the slices in a Ninja Grill, you can line the grill basket with baking paper and bake at 160ºC for about 15 minutes. Again, let the cake cool completely before cutting into squares.
Tip:
1. With 120g xylitol, the cake is a bit very sweet. You can change the amount of sweetener here if you like.
2. These slices also taste great with different spices like the cinnamon, gingerbread spice or any spice of your choice. Simply add 1-2 teaspoons of desired spice.
