KETO Meal Plan: White Pizza and Summer Kale Salad!



Hey, Folks!

This week the meal plan is White Margherita Pizza for dinner and a bright and summery Kale and Almond Salad!

PIZZA – 1 serving
Ingredients:
240g Chicken Breast
2 T/25g Heavy Whipping Cream
5g Minced Garlic
10g Parmesan Cheese
25g Mozzarella Cheese
Italian Seasoning/Salt
60g Sliced Tomato

Fillet chicken breast. Place 2 chicken pieces between 2 over-sized pieces of cling wrap. Beat chicken with mallet to your desired thinness. Season chicken with salt and Italian seasoning on both sides. Place on lower rack in oven and broil on high for 12-15 minutes.
Heat cream in a nonstick pan on medium low. Add garlic, bring to slight boil. Add cheeses. Stir until smooth.
Top chicken with cheese and tomato.

Ingredients:
100g Kale
1T/14g Olive Oil
20g Lemon Juice
5g Minced Garlic
28g Parmesan Cheese
28g Sliced Almonds
Salt/Pepper to taste

Mix oil, lemon juice, garlic, salt, and pepper. Pour over kale. Top with cheese and almond slices.
